Variety: Pinot Noir
Age of the vines: planted in 1980
Terroir: Les Petits Picotins have an eastern exposure at an altitude of 240 metres. The soil is limestone with good drainage.
Cultivation method: Lutte raisonnée with tillage
Harvesting: Grapes are hand-picked into perforated crates and sorted by hand
Fermentation: Partial destemming, cold maceration for ten days or so, followed by fermentation in vats for 3 to 6 weeks depending on the vintage, with frequent pumping over and punching down in the early stages of fermentation.
Maturation: Between 12 and 15 months in oak barrels (20% new barrels)
Tasting notes: Nose dominated by ripe red fruit, raspberry cherry, a supple, complex palate with a slightly toasty finish.
Food match: grilled meats, aged cheeses
Serving temperature: 16 to 18°C
Block size: 0.45 ha
Estate size: 3 ha
Cellaring potential: between 5 and 10 years
